The climate crisis is no longer only threatening food production through droughts, floods, heat, and crop failures. It is also changing the nutritional quality of the food that does grow. Rising carbon dioxide levels can increase carbohydrate content in plants while lowering essential minerals and protein. The result is a quieter danger: people may eat enough calories and still suffer from “hidden hunger.”
For example, chickpeas, rice, wheat, potatoes, beans, and other major crops are steadily losing nutritional density as atmospheric carbon rises. Kristie Ebi of the University of Washington put the problem in everyday terms: “The diets we eat today have less nutritional density than what our grandparents ate, even if we eat exactly the same thing.” The effects are expected to fall hardest on poor communities, women, and children already vulnerable to anemia, zinc deficiency, and limited dietary diversity.
The scientific foundation for this concern is substantial. A Global Change Biology meta-analysis examined 5,324 entries, 29,524 observation pairs, 43 crops, and 32 nutrients or antinutrients. The researchers found a broad elemental shift in edible plant parts under rising CO₂, with zinc declining most strongly. Their conclusion is stark: “Nutrient security is under threat even if food security remains adequate; food will become more caloric and less nutritious.”
