Cheesy Tofu Casserole

Ingredients:
1 teaspoon dark sesame oil
1 cup diced onion
1 pound tofu (pre-boiled for 15 minutes
½ cup toasted sesame tahini
2 tablespoons dried wakame (soaked for 5 minutes and diced)
½ tablespoon Nutritional yeast

Following add amounts to your taste: 
Tamari sauce 
Basil
Oregano
Black Sesame seeds (for garnish)

Method:

  1. Heat oil in a skillet over medium heat.  Add onions and cook until translucent. 2-3 minutes.  Set aside.
  2. Preheat oven to 350° F (175°C).
  3. Lightly oil a casserole dish and set aside.
  4. Process tofu (crumble) and tahini in a food processor until smooth and creamy. 
  5. Transfer to a bowl and mix with the cooked onions, soaked wakame, and tamari, basil, and oregano to season (be generous, taste as you go). 
  6. Spread mixture evenly in casserole and sprinkle with lots of black sesame seeds.  
  7. Cover and bake for 35 minutes.
  8. Remove the cover and bake for another 10-15 minutes, until the top is browned.  
  9. Serve with quinoa pilaf and steamed greens.
